Ingredients

  • 500 g of plain flour
  • 25 g of yeast (150 ml of lukewarm water + a little crystal sugar)
  • 3 eggs
  • 250 g of softened butter
  • 350 g of sugar (1/2 semolina, 1/2 pearl sugar)

Directions

  1. Crumble the yeast into a little water with sugar.
  2. Mix the flour, butter (not melted), eggs, and yeast and let it rest for +/-2 hours under a towel (it should double in volume in this time).
  3. Add the sugar and mix again.
  4. Place the batter in a hot and buttered waffle iron.

It’s a special waffle recipe from the heartland, every family has their own, but this one, over 100 years old, is by far my favorite.
